I still remember the first time I saw Texas. The prairie, the canyons, and the sagebrush called to me in a way that no other place ever will as I drove toward Dallas. The sights and sounds of Texas will forever remain etched in my memory, and wherever I am I will always carry a peice of Texas in my heart.

Why am I in love with Texas? People there are family oriented and I'm a family guy. Also everything is bigger in Texas and as a tall man myself, I'm more comfortable in the wide open spaces. When I say Bigger, I mean bigger than Big! King's Ranch takes up the whole south end of Texas. There's a big white statue of Sam Houston that lights up the sky and is tall enough to be seen from miles away. There's Big Ben National Park, and Billy Bobs of Texas, the largest Honkey Tonk in the world, in the stock yards at Fort Worth, and to top it off, they deliberately made their capital building taller than the white house.

Big is nice but what I loved most of all was the Bar B-Q.

In Texas, cooking on a charcoal grill is almost a hanging crime and I learned real quick the proper way to do it: with Texan Pride, and love in every minute of mesquite smoke. It only took one Bar B-Q brisket sandwich and I was hooked! I had to know how to do it right, and with the help of some friends and neighbors and a little of my own research, I learned how to cook Traditional Texan Bar B-Q. After a couple of years I had even built my own custom Bar B-Q pit.

Now, having moved back to the Northeast, I bring back my son Jacob and my Bar B-Q pit.

Jake's Bar B-Q was born.

With Texas in my heart, I feel its the least I can do to share it with everyone - and I can't wait to hear from you!
